Muçarela de bisonte/Buffalo mozzarella

Gosto imenso de muçarela de bisonte, mas sempre pensei que o "bisonte" fosse apenas para dar um ar de excentricidade ao queijo. No fundo, no fundo... o queijo seria sempre de vaca, ovelha ou cabra!

Algum tempo atrás algum colega meu disse-me que o leite é mesmo de bisonte (aparentemente o leite deste animal tem um nível de gordura mais elevado o que lhe confere uma textura especial) e que a Suiça é um dos grandes produtores deste queijo. Imagine-se o meu espanto quando a semana passada a caminho do golfe me deparei com uma manada de bisontes em plena Suiça!

I've always enjoyed buffalo mozzarela a lot (actually bison mozzarella would be a more adequate term, but anyway...), and I'd always thought that the word "buffalo" was there just to add some excentricity to the cheese. After all, cheese would always be of cow, sheep or goat.

However, sometime ago a colleague brought to my attention that buffalo milk is actually used to produce the cheese (it looks like that the extra fat gives the cheese that special texture), and that Switzerland is one of the main exporters of this kind of cheese. Can you imagine how surprised I was to see a buffalo herd in the Switzerland landscape?
